Blueberry Spinach Protein Muffins

Protein, fruit and veggie packed, these are 100% a guilt-free treat! Made simply by putting all ingredients into a blender. No fuss, minimal clean up with BIG flavour!


Ingredients:

  • 3 ripe bananas

  • 1/3 cup nut butter (I used cashew)

  • 3 large eggs

  • 2 tablespoons pure maple syrup

  • 2 tablespoons nut milk

  • 1/2 cup almond flour

  • 4 tablespoons coconut flour

  • 1 tablespoon spinach powder

  • 1 scoop vanilla plant-based protein

  • 2 teaspoons pure vanilla extract

  • 1 teaspoon baking soda

  • 2 teaspoons cinnamon

  • 1/2 cup fresh blueberries

Directions:

  1. Preheat the oven to 350F° and line a muffin tin.

  2. Place all ingredients into a blender, blending until smooth.

  3. Fill each muffin holder 3/4 full, leaving room to rise.

  4. Bake for 15-20 minutes.
