This recipe requires only five ingredients and sweetened naturally from the dates. Packed with healthy fat and fiber, have it for breakfast, as a snack, or as a treat!
Ingredients:
2 cups gluten-free rolled oats
16 dates, pitted
1/4 cup chopped nuts of choosing
1/3 cup all-natural peanut butter
1/4 cup dairy-free milk
Directions:
Preheat the oven to 360°F.
Process half of the oats into oat flour using either a blender/food processor.
Cut half of the dates into pieces and blend the other half into a paste (using a food processor).
Roughly chop the nuts. Alternatively, you can purchase them pre-chopped. I picked peanuts to match the peanut butter, but any other kind works just as well!
Knead the date paste, chopped nuts, and oat flour together with the remaining oats, peanut butter, milk, and salt to form a dough.
Stir in the remaining date pieces.
Line a baking sheet with parchment paper, divide the dough into balls of equal size and press flat to make cookies.
Bake for 15-20 minutes, then allow cooling completely on a cookie rack
