Carrot Cake Smoothie

Start off your day with this refreshing and nutrient-dense drink. The beta-carotene found in carrots readily converts to vitamin A, which helps protect your eye health and supports a healthy immune system. The ginger contains powerful anti-cancer, antitumor, immune-boosting, and antimicrobial properties. Sprinkle on some bee pollen for an extra added immune boost.
Ingredients:
3/4 cup loosely packed carrot, grated
1 small piece of ginger (around pinky size)
Half frozen banana
1/3 cup dairy-free milk
1/4 cup gluten-free oats
2 tablespoons coconut yogurt (or other kind)
1/2 teaspoon Ceylon cinnamon
1/8 tsp nutmeg (optional)
Ice cubes and extra water to help blend
Directions:
Peel the carrot and ginger.
Place all ingredients in your blender and blend until smooth and creamy.
