Ingredients
3/4 cup unsweetened pumpkin puree
2 large eggs
2 tablespoons pure maple syrup
1 cup unsweetened almond milk (any milk will work fine)
1 tablespoon avocado oil
1.5 cups gluten-free all-purpose flour (I used Bob's Red Mill)
2 scoops of vanilla protein powder ( I used The Nourish Market Vanilla- save 10% with code ASHLEY10)
1/2 teaspoon vanilla extract
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
1/2 teaspoon baking soda
Directions:
Begin by preheating your waffle iron.
Next, in a large bowl, mix all wet ingredients.
Then, add in dry ingredients and stir until combined.
Once the waffle maker is preheated, spray with cooking on both sides. Pour a 1/3 scoop of batter into each section of the waffle maker and close. Let cook for about 1.5 to 2 minutes, or until the green light comes on. If it needs more time to cook, close it and let cook for about 20-30 seconds longer.
Use non-stick tongs to remove the waffles from the iron.
