S’mores Inspired Overnight Oats

Summer is officially here! Warmer, longer days, and late nights by the fire. I live for this season and all of the delicious food it brings along with it. S'mores are a very nostalgic treat for me, as it was always something my family had around the campfire. So why only enjoy it in the evening? I have reimagined this summer fireside staple into a creamy and delicious breakfast treat! Packed with healthy fats from chia and pumpkin seeds and containing a whopping 24g of protein to stabilize your blood sugar levels, this breakfast is sure to be your new summer staple!
Ingredients:
1/4 cup gluten-free rolled oats
1 1/2 teaspoon chia seeds
1 scoop of vanilla protein powder
3/4 cup water
1/3 cup Nutpods Toasted Marshmallow Creamer
1/2 teaspoon pure vanilla extract
Toppings:
Gluten-free graham crackers
Vegan marshmallows (I love the one's from Dandies)
Shaved dark chocolate
Raw pumpkin seeds
Directions:
In a single serve bowl, stir the oats, chia seeds, and protein powder.
Add in your water, creamer, and vanilla.
Stir until combined, then place your oats in the fridge for a minimum of 6 hours or for best results, overnight.
Stir again before decorating with your toppings.
