S’mores Inspired Overnight Oats

Summer is officially here! Warmer, longer days, and late nights by the fire. I live for this season and all of the delicious food it brings along with it. S'mores are a very nostalgic treat for me, as it was always something my family had around the campfire. So why only enjoy it in the evening? I have reimagined this summer fireside staple into a creamy and delicious breakfast treat! Packed with healthy fats from chia and pumpkin seeds and containing a whopping 24g of protein to stabilize your blood sugar levels, this breakfast is sure to be your new summer staple!


Ingredients:

  • 1/4 cup gluten-free rolled oats

  • 1 1/2 teaspoon chia seeds

  • 1 scoop of vanilla protein powder

  • 3/4 cup water

  • 1/3 cup Nutpods Toasted Marshmallow Creamer

  • 1/2 teaspoon pure vanilla extract

Toppings:

  • Gluten-free graham crackers

  • Vegan marshmallows (I love the one's from Dandies)

  • Shaved dark chocolate

  • Raw pumpkin seeds

Directions:

  1. In a single serve bowl, stir the oats, chia seeds, and protein powder.

  2. Add in your water, creamer, and vanilla.

  3. Stir until combined, then place your oats in the fridge for a minimum of 6 hours or for best results, overnight.

  4. Stir again before decorating with your toppings.
